Guest presenter José López Ganem is an Adjunct Faculty member at Boston University as well as the Co-Executive Director of Fine Cacao & Chocolate Institute. In the fall 2023 semester, José introduced a new course to BU’s Gastronomy Program titled Latinx Experiences of Farming, Cooking and Eating in the United States.
A December 2023 BU Today feature asserted that “The course examines the ‘fundamental force’ that ‘Latin American or Spanish-speaking people’ bring to the food culture of the United States.” Further, the article stated that “From farmers who grow and pick the produce that ends up on grocery store shelves to the chefs who create mouth-watering cuisine, the servers who deliver those meals to a restaurant table, and the bussers who clear away the empty plates, people who are part of the Latin American diaspora are often the overlooked engine of the US food system.” During this presentation, José will discuss these experiences with a particular focus on next generation farming, and more generally, how food can be a window through which to view and consider history, politics, culture, and community.
